Avocado Toast With Chorizo

Firm avocado
Ingredients
  • 1 tbsp pumpkin seed
  • 85g chorizo
  • 1 ripe avocado
  • juice ½ lime
  • ½ small pack coriander 
  • 2 eggs
  • 2 slices of wholemeal bread
Steps

1. Heat a large frying pan and toast the pumpkin seed for a few minutes.

2. Add the chorizo and cook it for 5 minutes until it becomes crisp.

3. Mash the avocado with lime juice and add a pinch of salt.

4. Toast the slices of bread.

5. Fry both eggs to your liking.

6. Place both bread slices over a plate, spread the mashed avocado and top with the chorizo and pumpkin seeds.
